Hearty Veggie Burgers

When it comes to food and fitness, I'm all about a healthy balance. I don't restrict myself, and I eat whatever my body is craving. I've stuck to this mindset for a little over a year now and I find that it has really helped me stay on track, physically and mentally - not to mention I'm actually enjoying ALL of my meals :) 

For those of you who have been following my blog from the VERY beginning, you might know of the struggles I've had in the past. But if you're new to my blog, you can read all about that here!

Anyway, let's get down to business - veggie burger business! I love a good hearty veggie burger so it's no surprised that I've adapted my own version from ALL the yummy recipes out there. Believe me when I say I love a typical meaty burger, but I also love a delicious burger filled with veggies! Some would say I'm a foodie so to say I love all foods would be an understatement :)


To start making the veggie burgers, you'll need a large bowl. Mash up the black beans with a fork until desired consistency. This would also be a good time to preheat your oven to 400 degrees.


Chop up some broccoli florets and add them to the same bowl. 


 The same goes for the mushrooms. I wasn't kidding about the hearty part :)


Add in your panko crumbs, parmesan cheese, garlic powder, cumin, salt and pepper.  


Mix up all the ingredients until fully combined.


Add your eggs and mix everything together to form a wet mix. 


Spray a baking sheet with non-stick spray and form your patties. Bake your burger patties in the oven for about 20-30 minutes or until golden brown around the edges and the egg is cooked through.

Serve burgers on whole wheat buns and add whatever toppings you like! I love adding avocado, or lettuce and tomato. Sauces like ketchup, BBQ sauce or spicy mustard would be delicious as well! Enjoy :)


Hearty Veggie Burgers

1 can of Black Beans, rinsed and drained
1 Head of Broccoli florets, chopped and large stem removed
Pint of Baby Portobello Mushrooms, diced
1/2 Cup Panko Bread Crumbs
1/2 Cup Grated Parmesan Cheese
1 tbsp Garlic Powder
1 tbsp Cumin
2 Large Eggs
Salt and Pepper, to taste

*Cooking instructions above - recipes makes approximately 6 good-sized burgers or 8 smaller ones.
