Pumpkin Spice Latte

It can't be pumpkin season without the famous Pumpkin Spice Latte. But if you can believe it, I have yet to get my fix on this popular fall treat. 

The truth is, I have a morning routine I like to stick to and often it involves brewing my own cup of coffee. But this past weekend, Florida finally had what felt like a "fall weekend" and I found myself craving a cup of that warm, pumpkiny spice. 

Instead of picking up a standard PSL from your typical coffee shop (and most likely overloaded with sugar), I decided to create my own version and I'm SO glad I did. Not only was this super easy to make, but my version has all natural ingredients and the perfect amount of sweetness. This recipe can totally be adjusted to your liking and if you're vegan, simply swap regular milk with your favorite alternative - I swear it will taste just as delicious! To be honest, I might even prefer the latter :)

Pumpkin Spice Latte 
(Serves 1-2)

1 cup of Whole Milk or Non-Dairy Alternative
2 tbsp Pumpkin Puree
2 tbsp Maple Syrup
1/4 tsp Pumpkin Pie Spice
Splash of Vanilla Extract
Strongly-brewed Coffee or 1 Shot of Espresso
Whipped Topping (optional)
Grated Nutmeg (optional)

1. Combine milk, pumpkin puree, maple syrup, pumpkin pie spice and vanilla into a small pot and bring to a gentle boil. Once it reaches boil, take it off the heat and whisk vigorously until frothy (about 30 seconds).

2. Pour coffee or espresso into mugs followed by the pumpkiny milk mixture.

3. Top each mug off with whipped topping and a fresh grating of nutmeg, and enjoy!
