Creamy Avocado Pasta

I am SO excited to share this recipe with you guys. It has been raining a lot here in Okinawa so when the weather gets like this, all I want is comfort food and sometimes, not the healthiest kind. But since I am in wedding mode, I knew I wanted to make a healthier twist.  And this CREAMY avocado pasta is everything I could ask for when it comes to guilt-free comfort. It's gluten-free AND vegan!


Creamy Avocado Pasta:
{Inspired by Inspired Taste}
Servings: 2

2 tbsp olive oil
1 small pack of cherry tomatoes, halved
1 avocado, pitted, halved and scooped out
1 garlic clove, peeled
juice of 1/2 lemon
pinch of salt
1/2pkg. Quinoa Spaghetti-Style Pasta
salt + pepper to taste

Add 1 tbsp of olive oil into a food processor along with the avocado, garlic, lemon juice, and salt. Pulse until smooth and creamy. When finished, set aside and sauté tomatoes in 1 tbsp of olive oil until heated through. Cook quinoa pasta in boiling water according to package…this should take about 6-9 minutes. When everything is cooked and drained, combine sauce with pasta, making sure it's well-coated. To finish it off, add the tomatoes on top, salt and pepper to taste and ENJOY.

The texture is SO creamy, you would think it had cream in it. This dish is really perfect for any type of day. And if you like a spicy kick, crushed red pepper flakes are AMAZING in this.


It's safe to say I'm obsessed with avocados. I eat half an avocado everyday…on toast, eggs, salads, in sandwiches, wraps and even smoothies. What's not to love? They're creamy, add great texture and take on pretty much any flavor you want. Plus they have great health benefits! Eat them and try out this recipe. You won't regret it!
